The Chew: Mario Batali King Salmon with Fava, Radishes, and Lemon Celery Citronette Recipe Ingredients

Favetta Ingredients
- 2 lb Fava Beans (or use Peas)
- 2 tbsp Thyme leaves
- 1/2 cup Extra Virgin Olive Oil
- Salt & Pepper
Citronette Ingredients
- Zest & Juice of 1 Lemon
- 1 tbsp Dijon Mustard
- 2 tbsp chopped Chives
- 1/4 cup Extra Virgin Olive Oil (+1 tbsp)
- Salt & Pepper
Salmon Ingredients
- 4 4-oz fillets skin-on King Salmon
- 1 thin sliced stalk Celery
- 1/2 lb thin sliced Radishes
- 12 fine shredded leaves Flat-Leaf Parsley

Favetta Directions
- Boil a large pot of water and add salt.
- Arrange an ice bath near the stove by placing a smaller bowl inside a larger bowl filled with ice cubes and a small amount of cold water.
- Shuck fava beans before blanching them for two minutes in the boiling water; drain and then cool in the ice bath.
- Drain the beans again before peeling away their skins.
- Use a food processor to pulse together the beans with thyme leaves on high speed.
- Stream in about 1/2 cup olive oil with the motor running, and process to the consistency of guacamole; salt and pepper.
- Transfer favetta to a bowl. Cover and reserve.
Citronette Directions
- Combine lemon juice and zest with mustard and 1/4 cup olive oil.
- Last, add chives with salt and pepper.
Salmon Directions
- Heat a saute pan on high.
- Dress each salmon fillet with olive oil, salt and pepper.
- Place fish in the hot pan, skin side down, searing for a few minutes.
- Flip the fish and cook it on the second side for about 45 seconds.
- Use a spatula to transfer fish to a platter.
- Spoon a bed of favetta onto each serving plate.
- Place a portion of fish on top of the favetta.
- Toss radishes and celery in citronette.
- Spoon this dressing over each plate.
- Garnish with parsley and serve.
