The Chew: Mashed Potato Casserole Recipe Ingredients

- 2 sticks butter – at room temperature
- kosher salt and freshly ground black cracked pepper
- 5 lbs Yukon gold potatoes
- 1 C sour cream
Toppings:
- 2 tbsp fresh flat-leaf parsley – chopped
- 1 tbsp fresh grated horseradish
- 1 tbsp olive oil
- 1 1/2 C Panko breadcrumbs
- 1 tbsp fresh dill – chopped
- 1 lemon – zested
The Chew: Mashed Potato Casserole Recipe Directions
- Preheat the oven to 400 degrees
- In a large pot of salted water, add the peeled potatoes and bring to a boil
- Lower the heat slightly and cook until the potatoes are tender
- Cook for 25-30 minutes
- Save one cup of the starchy potato water
- Remove from heat
- Drain the potatoes and put back in the pot
- In a small saucepan, melt the butter and sour cream
- Pour the mixture over the drained potatoes in the warm pot, and mash while adding some of the saved potato cooking water to reach the right consistency, but keep the mixture loose because it will thicken while standing and after reheating
- Add salt and pepper
- Add the potato mixture to a buttered 9 x 13-inch baking dish
- In a bowl, add th breadcrumbs, dill, parsley, lemon zest, and horseradish, then mix
- Stir in the olive oil and season with salt and pepper
- Top the mashed potatoe mixture
- Bake for 30 minutes
