The Chew: Pan Seared Turkey With Gremolata Compound Butter Recipe Ingredients

Carla Hall shared an easy turkey recipe that’s great for a last minute Thanksgiving entree, or any other dinner! (izik / Flickr)
- 1 whole turkey – 11-15 lbs, cut into 8 pieces
For the Brining Liquid:
- 1/2-3/4 C kosher salt
- 10 whole allspice/cloves/black peppercorns
- 7-8 thyme sprigs
- 1/2 C olive oil
- 4 C water
- 1/2 C brown sugar
- 5 star anise
- 1 habanero – slit open
For the Spicy Gremolata Compound Butter:
- 1/4 C sage leaves – chopped
- 3 tbsp lemon zest – finely grated
- 2 tsp kosher salt
- 1 1/2 C parsley – packed, chopped
- 4 cloves garlic cloves – minced
- 2 tsp crushed red pepper flake
- 1/2 C butter – softened
The Chew: Pan Seared Turkey With Gremolata Compound Butter Recipe Directions
- Combine all the brining ingredients in a large re-sealable plastic bag and shake to dissolve the salt and sugar
- Put turkey parts in the bag and put in the fridge for 6 hours or overnight
- Remove the turkey from the brine and rinse thoroughly
- Pat dry, then gently loosen the skin from the turkey pieces
- Preheat the oven to 400 degrees
- In a medium bowl, add the butter, parsley, safe, garlic, lemon zest, crushed red pepper flakes, kosher salt, and then mix
- Rub the spicy gremolata under the skin on each piece
- Heata heavy skillet to medium-high heat
- Sear each piece untl golden brown on all sides
- Put seared pieces on a sheet pan and finish cooking them in the oven
- Cook to an internal temperature of 160 degrees, for about 30 minutes
