The Chew: Pancake Breakfast Sandwiches

Carla Hall shared a recipe for Pancake Breakfast Sandwiches that you can use to prepare an easy, flavorful breakfast for a group. She shared a great tip for making eggs perfectly sized for the sandwiches, and used a delicious cherry jam to really take these over the top! You can make them ahead of time, and then wrap them in aluminum foil and heat them up on a panini grill for a quick on-the-go breakfast!

The Chew: Pancake Breakfast Sandwiches Recipe

For the Black Pepper Pancakes:

  • 2 tsp baking powder
  • 1/2 tsp black pepper – coarsely ground
  • 1 C milk
  • 1 tbsp thyme – leaves, chopped
  • 1 C all-purpose flour
  • 1/2 tsp salt
  • 1 large egg
  • 2 tbsp melted butter + 3-4 tbsp for cooking
  • 1 tbsp sage – finely chopped

For the Scrambled Eggs:

  • 2 tbsp heavy cream
  • 12 eggs
  • 8 oz Swiss cheese – roughly chopped

To Make:

  • 1 tbsp canola oil
  • 1 jar cherry jam – 8 oz
  • maple syrup – optional, to serve
  • 4 tbsp butter – for greasing the pan
  • 1 package turkey sausage patties – store bought, about 2 oz each
  • hot sauce – optional, to serve

The Chew: Pancake Breakfast Sandwiches Recipe Directions

For the Black Pepper Pancakes:

  1. In a large bowl, add the flour, baking powder, and salt and pepper
  2. Whisk to mix
  3. Make a well in the middle of the dry ingredients
  4. To the well, add the egg, butter, milk, thyme, and sage, then whisk together
  5. Carefully, a little at a time, incorporate the dry ingredients until fully mixed with no lumps
  6. Meanwhile, put a nonstick pan over medium heat
  7. Add a tbsp of butter to the pan
  8. For each pancake, add 2-3 tbsp of the batter to the pan and use the back of a spoon to make a round, 3-4 inch pancake (aim to make the pancakes the same size as the sausage patties)
  9. Repeat with the rest of the batter to make 10 pancakes
  10. Set the pancakes aside, then tent with foil to keep warm

For the Cheesy Scrambled Eggs:

  1. In a large bowl, add the eggs and cream
  2. Season with salt and pepper
  3. Whisk well, until the yolks and whites have combined
  4. Put a large, nonstick pan over medium-low heat and add the butter
  5. Add the egg mixture and cook, stirring often with a rubber spatula
  6. Cook until the eggs are set
  7. To a baking sheet sprayed with nonstick spray, transfer the eggs and flatting into an even layer
  8. Set aside to cool slightly
  9. Use a 3-inch biscuit cutter to cut 5 circles out, then set aside

For the Sausage Patties:

  1. Put a skillet or saute pan over medium-high heat and add 1 tbsp of oil
  2. Add the patties and cook until until golden-brown
  3. Flip and cook until golden-brown on the other sides and cooked through

To Assemble:

  1. Spread cherry jam on top of one pancakes, then top with breakfast sausage
  2. Top the sausage with a round of cheesy scrambled eggs, then a few dashes of hot sauce
  3. Top with another pancake
  4. Serve with maple syrup on the side
