The Chew: Sweet Potato Latkes Recipe
Mario Batali was excited to share a unique recipe for delicious latkes, made with sweet potatoes. These fried potato crisps are made especially sweet with the sweet potatoes and are great for serving as a side dish to any protein. Plus, the jalapenos really give it a kick!

The Chew: Sweet Potato Latkes Recipe Ingredients

Mario Batali’s Sweet Potato Latkes are a great mixture of sweet and savory, making for the perfect crunchy side dish. (idovermani / Flickr)
- 2 lbs sweet potatoes – peeled, grated
- 1 tsp kosher salt
- 2 large eggs – lightly beaten
- 1 C cilantro – stems trimmed
- 1/4 C scallions – sliced1 C Mexican crema (or sour cream) – to serve
- 1 medium yellow onion – grated
- 2 tbsp matzo meal – substitute ground crackers or all-purpose flour
- 2 jalapenos – 1 minced, 1 sliced, separated
- 1/3 C olive oil + 1 tbsp
- 1/2 red onion – sliced thin
- 1 lime – juice
- 1 C apple sauce
The Chew: Sweet Potato Latkes Recipe Directions
- Preheat the oven to 200 degrees
- Put a wire baking rack in a baking sheet and put in the oven
- In a food processor fitted with the shredder attachment, shred the potatoes and onions
- Transfer to a large bowl then add the matzo meal, salt, 1 minced jalapeno, and eggs, then mix
- Put a large cast iron pan or skillet over medium-high heat, then add 1/3 C olive oil
- Work in batches and add about 1/4 C of the sweet potato mixture per latke
- With the back of a fork, press gently to form 3-inch pancakes
- Cook for about 2 minutes per side until golden and crisp
- Use a fish spatula to transfer the latkes to prepared baking sheet in the oven to keep warm
- In a medium bowl, add the remaining jalapeno, cilantro, scallions, red onion, 1 tbsp olive oil, and lime juice
- Season with and toss to combine
- Garnish the latkes with spicy cilantro salad, Mexican Crema, and/or apple sauce
