The Chew: Tator Tots With Fried Eggs & Cheese Sauce

The hosts of The Chew were celebrating a disco-themed episode complete with 70’s style dishes, including Michael’s scrumptious brunch dish. He put together Tator Tots with Fried Eggs and Cheese Sauce, because why not go ahead and put together all the things we used to love in one dish? The thing about this particular recipe, is that Michael discovered what he claims is “the greatest tator tot version of all time” which means he made homemade tator tots, rather than using frozen ones. It is true that everything tastes better homemade!

The Chew: Tator Tots With Fried Eggs & Cheese Sauce Recipe Ingredients

The Chew: Tator Tots With Fried Eggs & Cheese Sauce

Michael Symon was inspired to make a 70’s style brunch dish using Tator Tots with Fried Eggs and Cheese Sauce. (jilbean3 / Flickr)

For the Tator Tots:

  • 1 tsp garlic powder
  • 1 tbsp flour
  • kosher salt and freshly ground black pepper
  • 2 lbs russet potatoes – medium-sized, peeled
  • 1 tsp onion powder
  • 1/4 C parsley – finely chopped
  • canola oil – for frying

For the Cheese Sauce:

  • 2 tbsp flour
  • 1/2 tsp nutmeg – freshly grated
  • 2 tbsp unsalted butter
  • 2 1/2 C whole milk
  • 1 1/2 C gruyere – shredded

For the Fried Eggs:

  • 4 large eggs
  • 2 tbsp olive oil

The Chew: Tator Tots With Fried Eggs & Cheese Sauce Recipe Directions

For the Tator Tots:

  1. To a large pot, add the potatoes and cover with salted water
  2. Bring to a boil and cook for 7-8 minutes until partiall tender
  3. Drain the potatoes and let cool
  4. When cooled, shred the potatoes into a large bowl, making about 5 C
  5. Add onion powder, garlic powder, parsley, and flour
  6. Season with salt and pepper
  7. Use a tbsp to scoop spoonfuls of potatoes, then shape them into tator tots, making about 40-45 total
  8. Freeze the tots until ready to use, at least 1 hour
  9. When the tots are frozen, heat a pot of oil to 350 degrees
  10. Place the tots in the oil in batches, and fry until golden brown and crunchy, about 2-3 minutes
  11. Remove to a sheet tray lined with paper towels and season with kosher salt, then repeat until all the tots are done

For the Cheese Sauce:

  1. To a medium saucepan over medium heat, add butter and let melt
  2. Add flour then whisk to combine
  3. While whisking, slowly add the milk until smooth
  4. Reduce the heat and simmer for 10 minutes until thickened
  5. Add the cheese and stir to melt and combine
  6. Season with kosher salt and freshly ground black pepper, then keep warm until ready to serve

For the Fried Eggs:

  1. in a large saute pan, add olive oil and heat over medium-high heat
  2. Crack the eggs in individual bowls, then put in the saute pan
  3. Cook until the whites are set but the yolks are still runny, about 2-3 minutes
  4. Season with kosher salt and freshly ground black pepper

To Serve:

  1. Put the tots on a platter and drizzle a good amount of the cheese sauce over them
  2. Top with fried eggs, then serve the rest of the cheese sauce on the side
