The Chew: Waldorf Salad Cups Recipe Ingredients

- 1/2 C sour cream
- 2 tbsp fresh flat-leaf parsley – chopped
- 1 lemon – finely grated zest and juice
- 1 large Granny Smith apple
- 1/4 C raisins
- 1 large head butter lettuce – trimmed, washed, dried, leaves separated
- 1/2 C walnut halves
- 3 tbsp mayonnaise
- 1 tsp honey
- 1 large red delicious apple
- 2 small celery stalks – chopped
- 1/2 C seedless red grapes – halved
- freshly ground black pepper
The Chew: Waldorf Salad Cups Recipe Directions
- Preheat oven to 350 degrees
- Spread out the walnuts on a baking sheet
- Toast in the oven for 10 minutes
- Cool and coarsley chop the nuts
- In a large bowl, combine mayonnaise, sour cream, parsley, lemon zest, and honey
- Lightly season with pepper and whisk until mixed
- Halve and core the apples, then cut into slices lengthwise, and cut the slices into thirds
- Add the apples, celery, raisins, and grapes to the bowl with the dressing
- Drizzle with lemon juice and toss to coat
- To serve, spread the leaves out on a platter
- Fill each leaf with a spoonful of the apple mixture then top with the toasted walnuts
