Today Show unveiled a new menu theme of Ultimate Party Foods, kicking things off with Giada De Laurentiis. Giada prepared two great ideas, her Chicken Chopped Salad Lettuce Cups and Buffalo Grilled Shrimp. Which one will you try first?

You could use any leftover protein (such as steak or pork) in place of the chicken to help you clean out the fridge or customize the recipe for your own family. Giada suggested making a batch of vinaigrette and keeping it handy in a sealed container in the fridge for recipes like this. Just remember to make small batches, because it will only stay fresh for a few days.

- 1 cup cooked, diced skinless Chicken Breast
- 1/2 finely diced Avocado
- 1/2 cup diced Feta Cheese
- 8 pitted, chopped Kalamata Olives
- 1 rough chopped Baby Arugula
- 1/4 chopped Fennel Bulb
- 1/3 cup thin sliced Sun-Dried Tomatoes
- 1/4 tsp Kosher Salt
- 1/8 tsp Black Pepper
- 12 Butter Lettuce Leaves
Dressing Ingredients
- 2 tbsp Apple Cider Vinegar
- 1 minced clove Garlic
- 1 tbsp Lemon Juice
- 1/3 cup Extra Virgin Olive Oil
- 1/4 tsp Kosher Salt
- 1/8 tsp Black Pepper

- Make sure the chicken breasts are completely cooked before you start assembling this recipe.
- Toss together the dressing ingredients and reserve them in a small bowl.
- In a mixing bowl, toss the chopped filling ingredients to combine everything together.
- Drizzle the dressing over the filling mixture.
- If you are taking this on a picnic, stop here and pack the filling separately from the lettuce.
- Portion the filling among the butter lettuce leaves to serve.
